We bought coffee from El Salvador this year from the Thelma de Gutierrez farm, which has been moving around the world of coffee all its life and also spent its childhood on its parents' farm. Since 2006, she has been the proud owner of the Madre Tierra farm, located in the hills of the Ilamatepec Mountains near Ataco. After buying her "Finci", Thelma immediately threw herself into all sorts of reconstructions and changes, which aimed to bring the desired fruit in the form of high-quality coffee beans. For example, he builds a new and better irrigation system, he plants new "shadow trees" on the farm, trees that protect coffee trees from direct sun, he strives for modern organic farming, he simply creates, builds, does not sleep on his laurels! So now why her coffee caught our eye. It is processed using the honey method, which leaves a little pulp on the coffee bean during processing and which opens the way for many flavors and aromas. The coffee enchanted us with its clean, sweet, round taste, which is reminiscent of jam and raisins. At the moment, we have the coffee tuned to the filter, where we think it also suits him best. That's why we roast it lightly.
